Has anybody had any experience with removing the black trims around the edges of the roof panels?
I know how to remove them but does water come in through the roof without the trims?

If you mean the tiny edge trims above the door windows, then i'd advise you keep them, believe it or not they channel a fair bit off rain past the window.  My All in one carbon roof doesn't have these and water can now work its way past the main inner seal in heavy rain and drips on me.

Whereas when I tested my roof before I sold it no water got in at all...  Ash ran his roof without trims too and I'm pretty sure he said he didn't get leaks either.

It must be an issue with my door and after market roof combo then, cause getting in on wet mornings can be a pain if I don't shut the door perfectly first time, a lot drips down onto me

I find a nicely waxed roof doesn't allow the water to  stay on it. Beads and runs off beautifully.

It should do it when still...  With a good coating of wax it should just run straight off.  Either that or carry a towel with you
